The boniato or tropical sweet potato (not yam), also known as batatas or camote, Cuban sweet potato, white yam, Florida yam, kamote, kamura; are best described as being a cross between a baking potato a sweet potato. The boniato has white dry flesh with a pink to purple skin that is fragile and bruises easily so they need to be handled with care. They can be cooked and eaten in the same manner as a baking potato or sweet potato. The ideal storage temperature is between 45F to 50F. The typical shelf life is up to 10 days.
